Il Vignot

Through this wine we aim at reaching the best possible results from a Barbera cultivar.
The grapes from the best Barbera vineyard of our company, named “The Vignot”, are harvested late, when in a state of over-ripening. This is possible only during non-rainy vintages, which enable such natural wilting.
A wine very rich in all of its components is thus obtained: strongly alcoholic, intense grim black in colour and extremely rich in substances which endow it with extraordinary stoutness and suitability for long conservation. Moreover, the natural acidity typical of Barbera is just adequately reduced, thus resulting in a non-heavy product.

Vinification
Tardive harvesting of grapes coming uniquely from the best of our company vineyards, the so-called Vignot, when in a state of over-ripening. Long maceration lasting at least 10 days and one-year fining in barrique. A further period of maturation follows, lasting at least six months, to stabilize the significant pigments endowment of this wine. Eventually bottling occurs. This Barbera is produced exclusively in the best vintages, those alone allowing for a result up to the highest expectations.
Organoleptic Profile
The Vignot Barbera is extremely robust and rich in flavor. It is dark purple red in colour. It exhibits fruity bouquets of preserve and cooked fruit, with spiced notes and aromas typical of roasting, such as bitter chocolate and coffee. It is extremely well-rounded on the palate, rightly tannic, rich in shades of flavour. To combine with substantial dishes, ranging from stews and grilled meat to well-ripened cheeses. It is also perfect sipped at the end of a meal as a meditation wine.
