Nebbiolo

Barbaresco’s “lesser brother”, Nebbiolo wine distinguishes itself by its major youth.
It does not require months of fining in wooden barrels, but it is all the same generally preferable to wait at least one year before bottling it in order to mitigate its strong structure and tannins.

Vinification
Fermentation in stainless steel, long maceration (at least 10 days) at relatively high temperatures in order to maximize the extraction of polyphenols.
Organoleptic Profile
A robust wine, but refined at the same time. Bright garnet-red in colour, it has a mixed bouquet, with both fruity (preserve) and floral (violet) notes. Full in flavour, rather tannic. It pairs well with palatable first courses, stuffed fresh pasta and meat courses.
